		<description>I&#039;ve never tried canning green peppers and can understand why they wouldn&#039;t turn out as tasty that way.  Freezing them is definitely the way to go.  I&#039;m surprised you don&#039;t care for your canned green beans though.  We love ours.  I do have to try our dehydrated ones soon though.  I&#039;d almost forgotten about those.</description>

		<description>I think it&#039;s the water that&#039;s making them sprout; your climate should allow you to simply root cellar them without adding extra humidity.

I&#039;m still trying to figure out how to root cellar at all in the hot desert, without digging an enormous hole and burying stuff.</description>
